When beach-lovers Meghan
Pollard and Eric Rakotz started
planning their nuptials after a
whirlwind courtship, they decided
to bring their destination wedding
dreams to their Arizona guests rather than the other way
around.
Vacations in Puerto Vallarta and a beach proposal in the
Caribbean were the inspiration for Meghan and Eric’s April
wedding at Troon North.
Yes, of course the wedding was in the middle of the desert,
but that didn’t stop this couple from trying to recreate those
things that they love about the festive beach atmosphere right
here at home.
Says Meghan, “We would have loved to be married on the
beach, but knew it would be difficult for everyone to come. The
plan was to bring the same warm feeling to Arizona.”
The couple exchanged vows outdoors with a view of the
valley, surrounded by natural foliage and bright wildflowers.
Siblings, cousins, nieces and nephews joined in Meghan and
Eric’s wedding party. The four-year-old ring bearer offered
comic relief when he completed his walk up the aisle with high
fives all around.
Meghan was able to tap into her flair for design through
color selection, entertainment, and menu choices. Watermelon-hued
bridesmaid gowns; peach, yellow and pink floral arrangements;
and gold table linens mirrored the majestic night sky
that enchanted guests during the reception.
Guests dined on sea bass and panko-crusted chicken for dinner,
and then danced the night away to the swinging sounds of
both a band and a DJ. The band provided “Sinatra style classics”
for two hours, including the couple’s first dance. The crowd
was wowed when the bride and groom took the floor to show
off the benefits of two months of dance lessons.
Dessert was a show-stopper cake, featuring alternating layers
of raspberry and lemon cake. It was decorated with gold icing
swirls, ribbons, and “movie star” roses delicately placed on each
layer. The wine loving couple offered wine charms as favors.
Their sayings read, appropriately: “I love you” and “love.”
